The long shaping machine is specially designed for shaping bakery products. It allows uniform forming and adjustment of dough products, maintaining the gluten structure and preventing deformation.
- Fully stainless steel construction for durability and hygiene.
- Equipped with motorized vertical rollers for centering the dough pieces, located before the laminating rollers that ensure a consistent product length prior to the laminating phase.
- Lamination is carried out in 3 stages to prevent damage to the dough's gluten structure.
- Food-grade polypropylene laminating rollers to prevent dough from sticking.
- The laminating rollers in stages 2 and 3 have a diameter of 100 mm, while the adjustable rollers have a diameter of 70 mm.
- Using the 3 adjustment levers, the distance between the rollers that laminate the dough piece can be regulated for subsequent shaping:
2–4 mm (dough pieces between 70 and 120 g)
5–9 mm (dough pieces between 150 and 400 g)
10–25 mm (dough pieces between 350 and 1300 g)
- Shaping is performed between the feed belt made of non-stick material and 2 stainless steel nets with different mesh sizes.
- After forming, the product undergoes a filonage process, which adjusts its shape, flattens the seams, and rounds the ends.
- Height-adjustable filonage tray with rack mechanism and a “V”-shaped top forming tray to relieve tension on the shaped product.
- Filonage tray length: 1000 mm.
- Maximum filonage tray height: 80 mm.
- Minimum filonage tray height: 35 mm.
- Using the filonager mechanisms, the following adjustments can be made:
Vertical adjustment to compress the product.
Horizontal adjustment to determine the product length.
